Plaster ceiling height - any ideal height?

Hi all, I am going to do plaster ceiling very soon. But I am not sure if 8.5 feet would be too low. This is to be on level with the beam. It will be level all the way from the door to the kitchen.

I can do 9.5 or 10 feet high ceiling but then the beams will be visible.

Anyone has similar dilemmas like this? Hehe..

Thanks in advance.
Hi all, anyone having stainless steel kitchen? Is it easily scratched?

I am thinking about it. Not sure to go for it or stick to the normal type.

Any insights are much appreciated.
