Back Up your Iphone

Just wanted to know how to FULLY back up iPhone ? I know it's under Devices , right click it and Back up but however if you check on the ' Restore from last back up..' it doesn't show the date and time of your back up info. It only show the date that you purchase your iPhone during set up and the previous iPhone back up datas.

Iphone stuck at Recovery Mode

As title, and i tried to use tinyumbrella to kicked out the recovery mode but however the phone did not restart but still hang on the Apple logo. Tried few times kicking out of the recovery mode already, but yet still the same.

Then, Itunes shows only restore button. I wanted to backup my files inside before restore it. If i click on the restore button, does it mean that everything on my phone will be deleted ?

The worse part is the iphone is out of battery, when i charge it, it will automatically brings me to the apple logo and freezes there and it didnt charge at all. :/
