Chef

Duties & Responsibilities
• Ensure cost of food and profit margin is controlled and maintain
• Organizing staff duty roaster
• Controlling salary, utility and food cost budget and keep accurate records
• Ensure the restaurants meet the health & safety, halal and hygiene requirements
• To ensure and confirm the kitchen preparation checklist is followed
• To ensure and confirm that the First In First Out (FIFO) system is followed by using date stamped system
• Ensuring product freshness at all times
• Recruiting, training, developing and managing entire kitchen team
• To promote positive work attitude and team spirit
• To have complete understanding of the recipe manual and kitchen operation policies and procedures
• Making sure food is of the right quality, price and produced on time
• Determine production schedules and staff requirements necessary to ensure timely delivery of services.
• Give instructions to cooks and other kitchen staff in the preparation, cooking, garnishing and presentation of food.
• Inspect supplies, equipment and work areas to ensure conformance to established standards
• Monitor sanitation practice to ensure that employees follow standards and regulations
• To ensure that the assigned kitchen and surrounding areas are kept clean and organized at all time
• To ensure the kitchen staff maintains high standard in appearances, grooming and hygiene.
• To check equipment performance and preventive maintenance records
• Overall responsibility for daily operations in the kitchen.

Qualification
• Minimum 2 years solid experience throughout hotel kitchens up to Chef De Partie in larger sized operation or Sous Chef in smaller setup.
• Good understanding of all applicable Health & Safety and Halal legislation & experience working with strict Health & Hygiene regimes
• Full understanding of food controls & experience of ordering and menu pricing
• Self-Motivated – and able to motivate others to achieve
• Proven man management, coaching and team building skills. To work effectively as part of a team whilst undertaking a leadership role, leading by example and offer clear direction to team
• Desire & ability to deliver quality ala carte food
• Experience preparing for large catering is a bonus
• Experience in managing a central kitchen is a bonus.

Duties & Responsibilities

• Answer questions related to menu items
• Take food and beverage orders from customers
• Relay food and beverage orders to the kitchen staff
• Prepare drinks and food garnishes
• Carry trays of food or drinks from the kitchen to the dining tables
• Remove dirty dishes and glasses, and clean tables after customers finish meals
• Prepare itemized checks and take payments from customers
• Clean and set up dining areas, refill condiments, roll silverware into napkins, and stock service areas

Hi Bros.

I'm seeking some advise and suggestions from experience bros in F&B line.

I have a small chicken farm that I inherited from a partner who has decided to quit this business. The partner was supposed to grow the chickens and then use for his restaurant and also supply to other parties. Unfortunately he decided to quit due to other commitments.

I'm just the sleeping partner hence don't have the know how. Now I'm left with about 4000 chickens to sort out.

Can any bros help suggest or provide contacts on where i can sell my chickens? Price can be nego.
