Game Rig Suggestion (around 8k max)

Currently my game rig cant keep up with new game (especially in higher resolution) . .
This my current rig.

CPU - E2xxx series... forgot actually (2.13 stock) OC till 2.9 or something.. havent check if the value right now still 2.9
MOBO - Gigabyte DQ6-X58 (if im not mistaken)
GPU - Asus 8800GTS x2 (SLI) 1st gen~
RAM - MUSHKIN (forgot also which one)
PSU - CM true power (600w) im not so sure

well that it's... dont need to info actually. just to say that my gaming rig is out of date

So i'v done some research for now. . and i got 2 choice.

Choice A:

CPU - i5 2500k
MOBO - ASUS MAXIMUS IV EXT ( B3 ) or should i get the "Z" with Z68 chipset
GPU - MSI GTX580 EX Lightning X2 (SLI)
RAM - still dont know, but i go for high performance RAM since i will OC it...
PSU - still searching. .

Pros:
- Dual GPU will definitely be good in here
- More extra cash for other thing (exclude input device and monitor)
- Save more power? beh....

Cons:
- Future upgrade need to have more extra cash since i dont know when the new IVB proc out, can in be used in soc 1155.

Choice B:

CPU - i7 3930k
MOBO - ASUS RAMPAGE IV EXT
GPU - MSI GTX580 EXT Lightning
RAM - still dont know, but i go for high performance RAM since i will OC it...
PSU - still searching. .

Pros:
- better processor????
- can use Quad Channel memory (still dont know performance wise)
- future upgrade will be better (i think so)

Cons:
- My budget will be strech out too much i guess
- need to hold some of other stuff (etc sound card, speaker and my car mod )
- only one GPU...

So the choice are between i5 2500k with dual GPU or i7393k with single GPU and some future upgrade . .

Currently im using Samsung BX2350 monitor. support only 1,920x1,080. I dont have extra monitor to play with.
This rig only for GAMING purpose as have macbook for my workstation. .
I will rarely using this rig for video editing and sort of... just pure gaming + OC purpose.

So bassicly wich one will you guys choose and why? any other future purpose will be great as would not change(maybe slightly upgrade) in the future .. Hmmm let say another 2~5 years max just like my previous gaming rig. .

Then will 2 channel RAM enough or 3 channel or maybe if im using I7 3930k Quad channel RAM would perform really well.
I'm open to other suggestion too.

BTW im not buying this in time soon, next week would be the fastest or if there any new model or next year (prefer early JAN only), i think i can wait, well hope so.

Again , this is only for gaming purpose... i hope i can play full details with max res for game around 2~3 years to come. .
