Questions on S&P, loan offer letter and agreement

Hi all,

I applied for housing loan from RxB bank, and signed their Loan Offer Letter end of December 2010.

Upon applying the loan, I've informed the loan officer that I am resigning from my job, and will start a new job on January 2011, and he told me it's ok.

Now that I've already signed my S&P last week, and the bank called me this morning, telling me that they failed to get verification of my employment status, because I've already switched job beginning this month.

So now they will hold my loan application, and I need to re-submit my documents of my new employment status.

Question:
1) I'm in a 6-month probation period with my current company, will that be a problem to my loan application?
2) Can they reject my loan application, even though I've signed the Loan Offer Letter?
3) If they reject my loan application, what can I do? Apply for another bank? But I've already signed my S&P, and paid the 10% deposit and legal/stamp duty fees.
