Appointment Letter, what to do ?

Hi guys, need some advise from you guys.

Here's the situation, I've being offered a position in company A as well as company B and I have the offer letter from both the company at the moment.

Now the question, let say I have sign the offer letter from company A but I am much more interested in the position offered by company B.
May i know what are the things I can do and can't do?
like telling company A thank you for the offer but no thanks or ....
