From current company to new company

hi, guys...

I am going to change job. I got my offer and tendered my resignation letter already. As my position in current company is the only one who in charge technical part of XYZ product. After i leave, there have no others staff who know this product. I was requested to train others staff in this period because the management no intention to employ a new staff for my current position. There have one big project still going on in early stage. I believe after i left the project still in half way. Therefore, the management propose that they need my help to come back for this project during handover. They willing to pay me. That is sound good but I don't think I can curi-curi come over to help this project because I also need handle project in new company during normal working hours.

So, what do you guys opinions?

My current boss also say if I can't curi-curi come out to help, he can talk to my new boss for outsource this project to us. I not yet reveal my new company. Should i do this? Normally people won't reveal new company right? If they outsource the project, i am the one who handle, means I need handle project in new company and also this project. Workload will increase. So struggling what is the best choice...?
