Unifi question - RJ11 (phone line) wiring

My current house has all the phone line wiring done up nicely (RJ11 socket in the wall, etc), upstairs and downstairs.

Since I'm terminating my streamyx and upgrading to unifi soon, I wonder if I can re-use the same telephone lines for the same phones in my house?

Is it possible to plug in the phone cable from the BTU to the phone jack in the wall, and then all the phones in my house will work?

Anyone tried connecting switch to switch?

Anyone of you tried connecting a switch to switch before?

I tried connecting them but I'm not sure if they are connected or not. The LEDs do not light up -- is this normal for a switch to switch connection?

Help with Subnets

Quick question for all you networking gurus out there

For security purposes, my servers are using subnet 255.255.255.240. Therefore they reside on the IP range x.x.x.17 - x.x.x.30 (That's the range for that subnet). Problem is, if I want to add a new server in, what IP can I set it to, in order for all the servers to be able to communicate with each other? If I set it to x.x.x.33, the gateway resides on a different subnet and the server won't be able to go online. Do I have to change all the servers subnet to 255.255.255.0?
